Cooking with Moose: Episode 3, Mini Fruit Tarts

Summer Fruit Tarts

This week I decided Moose and I would whip up a fun and healthy dessert! I chose mini fruit tarts thinking it would be pretty easy and fun for Moose! All week I had been on the hunt for dairy free heavy cream, which I thought would be way easier to find! Finally, I found it in a health food store, so I picked up two cartons! If you have every been to Europe, you would know that fruit tarts are very common in bakeryโ€™s around Italy, Spain, and other countries! So, I was excited to put my own spin on them for us to try and have a taste of home!

Ingredients and Tools

You will need:

-a tart or sponge cake bases
-fruit of your choice

For the cream-
-heavy whipping cream
-sugar
-vanilla extract
-a hand mixer or stand mixer
-and of course your tiny helper

What we used:

-strawberries, blueberries, raspberries, and kiwis

Helpful Tips

Tip: As I always mention, when cooking with young ones, I find it best to be as prepared as possible! Before I got Moose to help me, I cut up all the fruit, making him a separate bowl to enjoy (I learned from last time). And prepared the portions we would need.
Tip: I always wash your fruit in water and vinegar before putting it away. I do this in our clean sink as soon as we get home from the grocery store. Since I have been doing this we always eat ALL of our fruit because it is already clean!

How to make the mini fruit tarts

First, we made the cream. Moose and I poured the dairy free heavy whipping cream into our Kitchen Aid Stand Mixer on a med-high setting, letting it mix until peaks formed. Next, we added in the sugar and then the vanilla extract. (For the full recipe and directions click here.) Then, I spooned the mix into our sponge cakes and this is when it got messy! Moose went face first into the cream, coming up licking his lips! He helped me add fruit to a couple of the cakes before deciding he just wanted to dump the whole plate of fruit on top of the whip. But hey, it got the job done.

This is the joys of cooking with a toddler, you never know what is going to happen! All in all, we had a lot of fun making these and we invited my parents over to enjoy them with us later that in the evening and they said the tarts were delicious!
