Cooking with Moose: Episode 9, Gluten-Free Apple and Pear Tarts

The Farm of Pensacola

My mum, Moose, and I went to a local farmers market, The Farm of Pensacola, a couple of Sundays ago. On Sundays, they have a Green Bucket deal. You get 4lbs worth of fruit and veg for $5. I love this deal because it allows you to try out some new fruit or veg without having to buy a bunch of them. We picked up an apple, pear, kiwi, onion, orange, pumpkin, sweet potato, cucumber, zucchini, some pluots, peppers, and bananas. I paid just over $11 for all of this! We ate it all quickly, except the apple and pear which I forgot about until Tuesday night when I was looking through all our fruit and veg for the week. So I used these fruits for inspiration for this weeks Cooking with Moose. This week we made super easy apple and pear tarts with a gluten-free graham cracker crust.

1 stick of Butter
Gluten-free graham crackers

Brown sugar
Maple syrup
1-2 apples
1-2 pears

I didnโ€™t measure anything for this recipe, sorry! I just eyeballed most of it and it turned out quite delicious if I do say so myself! Start by preheating your oven to 400 degrees.

Making Apple and Pear Tarts

First, I peeled 1 pear and 1 apple, leaving the skin on the others. Then, I chopped them all up and put them into a bowl. Next, I melted 3 tbsp. of butter in a pan and added brown sugar, mixing until I got the consistency I likedโ€ฆ about ยผ cup. I poured this mixture over the apples and pears and let Moose mix it all up. Then we added in some maple syrup and continued to mix it up. This is the topping.

For the graham cracker base, I melted the rest of the stick of butter. While that melted I put about 6 graham crackers in a zip lock bag and we smashed them up. Moose really enjoyed this part! I added in some brown sugar and let Moose shake the bag to mix it all up. Once the butter was melted I mixed the graham cracker and sugar mixture into the pan. Since it was still hot I did this part.

The Final Touches to the Apple and Pear Tarts

By this time Moose had lost interest and was ready for his nap so I took over. I should have followed my own tip and made these earlier in the day when Moose was in a better mood.

For the final steps, I pressed the graham cracker base into the bottom of the mini muffin pan. Then topped it with the apple and pear mixture. I put the pan into the oven at 400 degrees for 20 minutes.

I did encounter trouble with getting them out because the base wasnโ€™t hard enough. If you let them sit for an hour or so I think this will help. We were heading out so I placed mine in the fridge but this made the bases too hard.

These apple-pear tarts still tasted delicious and I ended up adding some vanilla ice cream to them. It turned out to be very apple pie-like! Yummy!
