Easy Gluten-Free Blueberry Muffins
Moose hasn’t been feeling great for the past week or two. Between teething, a cold, and allergies, he has had a constant runny nose. Luckily this week, that is all it has been, he’s been back to his normal playful self! So today we decided to make some easy gluten-free blueberry muffins… from a box. But we did put our twist on things by adding a few ingredients! We picked up a gluten-free, blueberry muffin mix at our local store for days like today, where I wanted to do something fun but not leave the house.
We made these muffins in the morning right after breakfast, so while he was eating breakfast I got everything prepped. I recently picked up some smaller utensils for Moose, including a spatula and whisk. He was very excited to use them!
Here is what you need for this mix:
–Krusteaz Blueberry muffin mix
(Blueberries included)
-Milk
-Melted Butter
-Eggs
-Any other toppings you may want
-Muffin Tin
-Mixer

Such a Great mini helper
Moose helped me with almost every step. I preheated the oven and sprayed the oven tin with cooking spray. Then Moose helped me pour all the wet ingredients into the Kitchen Aid. He cracked the eggs, he loves doing this! We gave the wet ingredients a quick mix then added the muffin mix. After mixing all this together, we added in the blueberries. Moose had dumped half of them down the sink while trying to help. Luckily, I had some blueberries in the fridge. I tried to let Moose help me pour the mixture into the mini muffin tin, but that didn’t go so well either. So I finished pouring it and had quite a bit leftover! We topped half of the muffins with banana. This is how we made most of our easy gluten-free blueberry muffins!
Since I had so much leftover, I made a second batch of muffins. For these muffins, I added chocolate chips and sunflower seeds. My parents came over to hang out and we all enjoyed these delicious muffins. Moose kept asking for more and my parents couldn’t stop saying yummmm. I was genuinely surprised by how delicious they were since it was a gluten-free mix! I will definitely be buying this box mix again.
