Cooking with Moose: Episode 2, Pancake Muffins

Pancake Muffins

Moose Loves pancakes, but they can be time consuming to make, especially now that we are potty training. So, I decided to make a batch of pancake muffins that I can pop in the microwave and just heat up each morning. I found a couple recipes online and just kind of tweaked them to suit my family.

Doing things like cooking, with Moose keeps him engaged and his mind steady trying to figure things out. It is also a great way to work on his fine motor skills. Cooking is something we can do that easy and fun! Moose and I made these pancakes together and they were super easy. It can be tough to find things that Moose’s stomach agrees with, so this organic pancake mixture has been fantastic for the both of us.  I didn’t really like pancakes until I tried this brand. Outside of that, the muffins should last a couple of days fresh and can even be frozen in the freezer to have at a later day. I let him help stir the pancake mix and I also let him put the topping into each muffin.

Ingredients and Tools

What you’ll need:

-your favorite premade pancake mix (or you could make your own, but we are trying to keep it simple)

-your favorite toppings

-mini muffin pan

-your mini helper

What we used:

-birch benders pancake mix

-blueberries

-strawberries

-chocolate chips

-cheese and bacon bits

-mini muffin pan

-a knife to help get them out of the pan

Final Steps

I preheated the oven to 400 degrees and as always, prepared and cut the toppings ahead of time. I placed them on a plate to make it easier for Moose to grab them and place them in the pan. Next time I will have a separate little bowl for him as well, as he liked eating the toppings as he was placing them in the pan. He put the toppings in first and we both then poured the pancake mixture over the toppings. Another thing I will do different next time is to put the toppings on last, so they hopefully won’t sink to the bottom. We placed the muffin tin into the oven for about 15 minutes, checking them at 12 minutes.

These pancake muffins came out perfect and we all enjoyed a couple for an evening snack. Like I said, this was a super fun and easy cooking activity for us to do and will save me making pancakes every morning. What is your favorite thing to cook with your toddler?
